Backpacking Breakfasts
Ultralight purists will forego the stove (and therefore the warm breakfast) but in our opinion nothing beats a hot meal to start the day. While freeze dried meals are light and convenient, we implore you to give one of the following "real" meals a try on your next trip. All the meals below require minimal prep and can be cooked in one pot.
Instant Oatmeal
Get the kind that comes in the pouches. Just tear off the top and pour in the hot water. Eat directly out of the pouch for a mess-free breakfast
Meusli
Meusli is the Swiss breakfast food that is a cross between cereal and oatmeal. You can find meusli in most grocery stores next to the oatmeal. To prepare simply add hot water and maybe some freeze dried fruit and nuts.
Scrambled Eggs and Bacon
It is a myth that eggs need to be refrigerated. In the 60's, submarines would carry racks and racks of eggs unrefrigerated for weeks on end. As long as you can keep the shell unbroken, eggs can keep for five to seven days without danger of spoilage. To keep eggs from cracking, wrap them in paper towels and store them in a ziplock. Alternatively purchase a Coghlan egg container.

Coconut Chia with Cacao Nibs
Chia is a superfood that is a favorite among endurance athletes. To prepare mix chia seeds with cold water and coconut powder. Let sit for 15 minutes and top it off with cacao nibs. Who says you can't eat gourmet in the outdoors!
